Our Ethos and Approach
We believe food has the power to bring people together and make a meaningful difference. That idea sits at the heart of how we work. Sustainability and community are not side projects or separate initiatives. They are the foundation on which we build every plate, partnership and experience. We focus on sourcing responsibly, working with producers who care about the land and the people behind it. We cook with the seasons, support regenerative agriculture, and reduce waste wherever we can. We actively challenge our use of single-use materials and are shifting towards more circular systems across our operations. Through our partnership with isla, we measure our carbon footprint honestly and use that data to do better. We know we’re not perfect, but we’re embracing the process — learning, adapting and staying open to change. Our SWOP initiative helps us build relationships with suppliers who share this mindset, including The Estate Dairy, St. Ewe Free Range Eggs, ChalkStream® Trout and Liberty Wines.
Purpose
That Runs Deep
Community matters just as much. Every year, we dedicate over 100 hours and resources to cooking and food support for local charities. Through Plate for Change, we help deliver meals to grassroots organisations supporting people in need. And through our Pillars hospitality network, we invest in the people and places that help our industry grow in a more thoughtful, inclusive way. For us, hospitality is about more than service, it’s about looking after each other, and contributing something useful, whether that’s through food, time, or long-term partnerships. We’re proud of the work we’re doing and we're committed to moving forward with purpose, learning as we go.
